KADALI BHANDA BARA


plantain flower tikkis





plantain stem and plantain flower play a vital role in odia kitchen...
in every one's garden there must be a plantain tree in odisha..
we odia people make different recipes of plantain stem and plantain flower
like we make tikkis, patua,besara batibasa out of flowers
and even make rai,batibasa,bara,and pithaubhaja out of plantain stem too...





my husband is fond of banana stem and banana flower dishes
so i have to cook differently these two
here i have prepared banana tikkis
though it plays a difficult role while cleaning it but equally plays a yummy roll in taste
because taste buds ask for to have more and more




ingredients required------
one banana flower
salt to taste
pinch of turmeric powder
spices used as per your choices
1 chopped onion(here i have avoided onion as navratri fasting is on)
1 teaspoon ginger grated
1 teaspoon cumin powder
1 teaspoon garlic paste(here i have avoided)
1 teaspoon ruchi curry powder which one is local product masala in odish
1 tbl spoon chopped cilantro
1/4 th teaspoon red chilly powder
2 tbl spoon besan
1/4th cup rice
2/3 tbl spoon of oil for shallow fry ...







method to go forward ---

first separate the discarded thing from flower as it is shown in 3rd pic
soak the edible parts in water with 1/2 tbl spoon of salt for 10 mns
after 10 mns just mash them with your hand
and drain out the water
again soak them in water  and salt for 10 mns more
again the same procedure to be followed..
finally just boil it with water salt and turmeric
when it is to be boiled properly you soak rice in water
and after 10 mns make a smooth paste
when the flower part is properly cooked just strain it in strainer and keep in running water
so that its little bitterness which might have remained definitely goes away...
then now the interesting part which is will be tempting to eat..
in boiled flower add all the spices mentioned above along with little salt
rice paste and besan..
make small small tikkis or bara shape
shallow fry them in oil on tawa because it doesn't need to deep fry
as possible as to avoid oil...
and serve those yummy tikkis with any type of sauces....

PLANTAIN CARROT CHOP








ingredients ====
2 plantains
2 medium size carrots
1 teaspoon ginger garlic paste
hand full spoon green peas
 1 teaspoon whole cumin
1teaspoon cumin powder
1 teaspoon red chilly powder
5 tbl spoon gram flour
salt to taste
oil for frying
method====
first boil carrot plantain together with water in cooker
after it is boiled just peel off plantain
and mash them together carrot and plantain with little salt
heat a pan with 1 tblspoon of oil
add cumin when it starts to splutter add ginger garlic paste
add cumin red chilly powder and sauté them in low medium flame till both masala and oil gets separated........
add green peas
and mashed plantain and carrot and cook them altogether till peas become little tender
leave it for cooling in the meantime make the batter of gram flour ,salt and water
heat a wok with oil for frying
make small balls out of this paste and flatten them and dip them into batter and deep fry them
serve hot with any chutneys......

SANDWICHES WITH PLANTAIN,CARROT AND GREEN PEAS STUFFING



Today wished to have some sandwiches in the chilly morning in odisha
potatoes are restricted for me then an idea came to my mind to make the 
same stuffing of plantain instead of potatoes.....

ingredients required .......
1 plantain
a medium size carrot
2tblspoon green peas
4 pieces brown bread
1 teaspoon ginger garlic paste
1 medium size onion
1 teaspoon whole cumin
1\2 tbl spoon refined oil
salt to taste
butter for brushing 
1 teaspoon chicken masala powder(Bought from market)

method====
boil plantain with water
after it is boiled mash with common salt and keep aside
chop carrot and onion and keep aside
heat a wok add refined oil and whole cumin
when it starts to splutter add ginger garlic paste and salt
sauté fr 1 mn 
add chiken masala powder
add chopped carrot green peas n onion
stir them and cook them till carrot becomes little tender 
add mashed plantain and saute them in low flame for mns
stuffing is ready....
put this stuffing into bread slices and brush these bread with little butter and put them in sandwich maker and bake them till it turns into green signal.....

Aloo Chop

Ingredients
200 grams potato / 4 cups besan / 2 table-spoon ginger garlic paste /1 tea-spoon cumin seeds / 1 tea-spoon red chili powder / 6 cloves of crushed garlic / oil for frying / salt to taste / 1 tea-spoon turmeric powder / 2 table- spoon peanut seeds /1 tea spoon Toor dal / 2 tea-spoon curry leaves / 1 tea-spoon mustard seeds 

Method
Boil the potatoes in water…mash them with little salt and keep aside…Make a thick batter of besan, a pinch of haldi powder, salt, ginger garlic paste, cumin seeds and water…heat little oil in a pan…add peanut seeds fry it and then remove from the pan…pour a little more oil and add mustard seeds…when it putters…add crushed garlic, red chili powder, fried peanut seeds and the mashed potatoes…make smalls balls from the potato mixture…Heat oil for frying...take each of the potato balls…dip into the already prepared besan batter…fry in medium flame till it becomes brown… Serve hot with any chutney or any sauce, as desired…
